Accurately follow menus and approved recipes, checking to see that proper ingredients are used for specialized diets. Clean and prepare salads, pastries, and sandwiches per approved recipes. Stock line with proper foods, keeping supply correct. Follow infection control policies, sweep and mop floors, wash walls and furnishings. Keep proper records of federally donated foods for reordering, monitor receipt of groceries. Properly observe portion control; adjust recipes to meet census and portion control, to eliminate food waste. REQUIREMENTS: Knowledge of: Overall and dietary care plan for each member; medical terms to read diet orders; special diets and skill in serving; substitutions for proper implementation of doctors’ written orders; portion control, proper way to pre-wash dishes, operation of dishwasher and storage of clean dishes; handling equipment and chemicals properly and making correct choices. Skill in successfully following recipes and making changes. Ability to lift up to 40 pounds; communicate effectively; walk or stand 95% of an eight-hour shift and ability to read labels and dilution ratios of chemicals and proper documents.
